You won’t, I imagine be terribly surprised to know that the past week has registered pretty high on my personal stress-ometer. What with my lovely mum in hospital (she had a rough few post-operative days, but I’m relieved to say she’s been steadily improving since then), all the arrangements to make for the next stage of her recovery (partly actioned today with her transfer to a wonderful rehabilitation centre), and a whole heap of neglected work and to-do list jobs to catch up on.
All of which prompted me to write THIS WEEK’S BLOG about the stress busting techniques I turn to when I’m feeling overwhelmed (tick) and pressed for time (tick).
There are ten of them and each one takes no more than five minutes. I’m finding numbers 5 and 6 particularly effective at the moment, but they’re all strategies I use regularly and which I find do the trick for me.

It would be pretty much impossible to feel stressed in the company of Heydayer Teresa. She’s just one of those people who exudes positivity and enthusiasm.

Provided it’s all going according to plan, cooking is something I find a great stress reliever. When it’s not, that’s another story, but this recipe is one that even at my most stressed I’ve never managed to mess up, mostly because it’s so absurdly simple that’s practically impossible (I suppose you could overcook them, but honestly, it’s unlikely).
Better still, you can vary the ingredients in almost endless ways, so there’s no need to agonise over different family members liking/wanting different things. Another potential stress point sorted.
PIZZA QUESADILLAS
Depending on the size of the tortillas you use, this amount will serve two people (four if you use large tortillas), and take a total of less than 10 minutes to make
Take 4 tortillas and smear each one with plenty of tomato sauce. Top two of the tortillas with the fillings of your choice - you can make them vegetarian or do a mix of veggies and meat or fish. The ingredient world is your oyster! Whatever you choose top them with a generous helping of either grated cheese or generous slices of mozzarella.
Put the other two tortillas on top - sauce side down - then slide each one in turn into a dry frying pan and cook for approx 3 mins each side until the cheese is melted and the tortilla is lightly toasted.
Then tuck in!
I’m afraid what with all the goings on this week I literally haven’t had a moment to watch, listen to or read anything, so this week’s THIS WEEK I’M….. will have to wait until next week (that’s a lorra lorra ‘weeks’). Apologies.
